Am I the only one who finds the Application Control categories too broad to be useful?

I'm setting up FortiGate for our SaaS platform to control outbound traffic, mostly for security and productivity. I've been trying to use Application Control to block things like random cloud storage or streaming, but the categories feel huge and vague.

For example, "Cloud Storage" could be anything from a personal Dropbox share to an approved enterprise OneDrive workflow. Blocking the whole category isn't practical. Am I missing a way to make this more granular, or is this just how it's designed? I expected something more like a signature-based system where you can pick specific apps.
