You've hit on the scariest part, yeah. If you only test with simple, declarative sentences, the system will look flawless. The issue only emerges when the grammar has to *bend*, like in a subordinate clause.
A quick test you can run is to ask it to rewrite something like: "The report, which I will send after the meeting, contains the data." A native model will correctly shove the verb "send" to the end of the clause ("... den ich nach dem Meeting *senden werde*, ..."). A translation layer will often keep it sequential ("... den ich werde nach dem Meeting senden, ..."), which is a dead giveaway.
It's exactly how these systems slip through basic validation.
