Two that fit your "flat fee" and precision needs are **LegalSifter** and **Latch**. LegalSifter is built for contracts and excels at clause comparison across a library, with strong citations. Latch is newer but interesting; it lets you create a private "vault" of documents and ask questions across the entire set, which handles linkage well. Both have predictable subscription models.
However, the redaction features in most dedicated tools are still basic. For that, we ended up using a separate redaction module in our document management system (iManage) and feeding cleaned docs to the AI tool. It's an extra step, but it keeps the data control tight.
